Fresh bread is poisonous?   [Copy link] 中文

I like eating bread which is freshly baked, just taken out from the oven. But one of my friends warned me that the fresh bread is not good for eating, it shall be put aside for cooling down at least several hours, until the temperature turns low enough, then can we enjoy joyfully.
His reason is that the yeast in the fresh hot bread is still effecting and produces harmful gases which may damage our health, even cause cancers. I am shocked, but I doubt what he said, who knows the truth?
One thing that's truly hard to eradicate is the idea.

yes, we do, got an bread-baker, and we let it cool down, then eat it.

Just one more thing in life that is bad for your health yet is so yummy.
I'll take my chances with the piping hot bread fresh from the oven.
Hand it over here my friend. Lots of melting butter too!!!

1. There are no "harmfull gases" produced during baking (it is CO2).
2. Even CO2 production ends in the first part of the baking process (dough rising in high temperetures)
3. In the baking temperatures a yeast is completelly killed, so it is inactive afterward.

as far as I'm aware, only truth beside this "urban legend" is - the freshly baked dough is nod good for digestion generally, but it is still far from being "harmfull"

Btw. I love fresh bread (still warm, with the crunchy crust) with some butter. And devil take the legends... ;)
