If the color of the potato just under the skin is greenish, it's a good indicator that a toxin called solanine has built up in the potato.

What is solanine?
Solanine is a naturally occurring glycoalkaloid toxin that forms when potatoes are exposed to too much light. If ingested, symptoms include headache, nausea, fatigue, and intestinal issues. Ingesting large doses may even lead to hallucinations, paralysis and death.


If you're a big fan of spuds and find your potatoes look a little green, just make sure to peel and cut every trace of green away before you cook and eat them.
