In 'Reviving the Pine', Newman combines fresh pineapple, toasted Jack Daniel's barrel chips and Tanqueray 10 in a mason jar, then heats it sous vide for 24 hours at 115 degrees. After straining out and chilling the barrel chips, three ounces of the mixture are poured into an Absinthe-rinsed coupe and garnished with a lemon peel. The wood flavors are balanced by the sweetness of the pineapple.

For an upscale take on the state's most beloved cooling treat -- shave ice – Honolulu’s MW Restaurant vacuum-seals pineapple with lemongrass and kaffir lime to intensify the flavor. The pineapple is juiced and macerated with lime, then frozen and shaved. For the pineapple-coconut "snow," the kitchen blends pineapple juice with coconut milk, then aerates and freezes the concoction. Throw in mochi ice cream and coconut tapioca, and the delicious dessert is complete.

Once decorated as the "World's Best Mai Tai," Trump Waikiki Hotel’s award-winning take on the classic drink uses caramelized pineapple, a homemade sorbet made from pineapple and Bacardi Gold, and a fresh pineapple wedge for garnish. Other components of the Ilikea Mai Tai include Bacardi 8, Amaretto, Canton Ginger liqueur and kaffir lime sour.

This is a tourist thing. The locals drink Heinekin Beer by the 24 packs. 90 percent of the pineapples in Hawaii are imported from the Philippines. The fields of pineapple and sugar cane are gone.
Same goes for the seafood.
