The most famous dish in Beijing’s Gu Ye Lang restaurant is the Guizhou-style sour fish hot pot. Its main ingredients are shipped in from China’s Yunnan province in southern China and the fish have absolutely no added preservatives. They do, however, have an exquisite flavor and freshly decorated colors that will lure you into the restaurant whether or not you’re initial senses have a taste for it. We’re certain this fish has an all around distinctive taste and the soup is especially good—whether hot, sour or freshly sweetened. Before you sample the fish, savor a few spoonfuls of the soup to get your appetite started.
