正宗的陕西凉皮一般用面粉洗出的淀粉做成（当然现在市场上也有用绿豆粉做的），这里用rice就不合适了。
凉皮cold noodles--中国译典（但这与凉面有何区别？）
中国旅游网上，凉皮就用拼音 Liang pi。

I think you'd better show  "凉皮" to foreigners and explain what it is made of and how to make it , foreigners can understand.

hehe, 正宗的凉皮是用“玉米”做成的哦，其实也不用刻意吧“凉”翻译出来，那样的话“通心粉”就不能叫'Pasta"了.

我认为叫"liangpi" 或"corn noodle" 都可以的 ;-)

may be translation of english just as china`s fashion noy westen,so Liang pi is ok,and you would better eat  them with your foreign friend.

I also think that it should be translated into "liangpi". in my opinion, it is similar to Lixiaolong`s creating "Kongfu"expression.

I realy think that "凉皮"should be translated as cold noodle with sesame sauce(a kind of corn noodle in Shannxi Province in China)

i think "liang pi" is better, when i was in my freshman year, our foreign teacher called 肉夹馍“bing with meat”, so now, i thin liang pi can also be interpreted here.

如果是文字的话,后面加上解释, it is a kind of flat belt-shaped noodle instead of traditional thread-like one.its ingredience varies from rice to mung bean and to corn starch, etc.it is served cold with different sauces and dressings like blah blah blah(我不知道里面放什么,偶系南方银)
如果是和老外一起上街的话,就指给他看.哈哈
