Ortolans: could France's cruellest food be back on the menu?

These little birds have been a favorite in France for a long time.
They are still poached and sold and eaten in France despite being protected.
The French think they are sacred because of their taste and not for healing.
At least if they thought they had healing properties their pouching could be
understood.

Q. And how are they killed?

A. This is where the squeamish need to look away. Traditionally in France, the fattened little birds are drowned in a vat of Armagnac – managing to snuff out their life and marinate them at the same time. Killing two birds with one glug, as it were. French chefs argue that "it's not a bad way to die". Well, I suppose it might be less cruel than  force-feeding a goose in order to fatten up their livers into foie gras.

Q. How do you eat such a tiny bird?

A. The French do themselves no favours. There is a ritual to eating an ortolan: diners cover their head in a large napkin. They then pop the entire bird into their mouth and eat everything save the feet, crunching the bones as they go. The napkin is partly to keep in all the aromas of the dish, partly to disguise you having to spit out some of the bigger bones. But, mostly, because diners wish to hide the shame of eating such a beautiful creature from the eyes of God.
If capitalism promotes innovation and creativity then why aren't scientists and artists the richest people in a capitalist nation?

France is one of the most civilised nations, Deer Robert. They don't have the barbaric capital punishment. And the French don't subscribe to superstitious customs that involve animal sacrifices either.

The French aren't civilized. They are barbaric.

The Chinese look up to the French whose revolution paved the way for China's own revolution. Deng Xiaoping went to France to familiarise himself with the finer aspects of modern life and he introduced red wine to the Chinese people. Mr Mao ran a private villa in the French concession in Shanghai. The French have all the keys to China's culture.
